3 Easy vegetarian recipes
for beginners
Do you ever get home after a long day and not feel like making dinner? Of course! Everyone has those days. It can be especially hard if you are new to being a vegetarian and grew up in a meat-eating household. So for the days that you can't think of anything here are a couple of my go-to quick and easy dishes.

Queso Meatballs

Ingredients
9 vegetarian meatballs
1 can of queso with salsa
or
3/4 to 1/2 a bag of shredded cheese
2 tbsp of jalapeno peppers
2tbsp of banana peppers

Directions
Preheat the oven to 350. Place meatballs in a casserole dish. Pour queso over
meatballs. If you want to create your own queso, cut up banana peppers and
jalapeno peppers into very small chunks, place the peppers and your choice of
cheese over the meatballs. Try to pick a cheese that is already melted or that
will melt. Bake the casserole for 15 minutes.

Stuffed Mushrooms

Ingredients
1 pack of mushrooms about 9 mushrooms
2 cups of dry stuffing
1/8 cup parmesan cheese

Directions
Preheat oven to 400. Wash mushrooms and pull out the stems. If able scoop out
some of the inside of the mushroom caps with a spoon to make more room. Place
stuffing inside the cap, you can use other ingredients for the stuffing like
quinoa, garlic, cream cheese, I like stuffing the best. Place mushrooms on
a greased baking sheet and bake for 20 minutes. During the last five minutes
sprinkle cheese over top and finish baking.

Roasted Asparagus and Pasta

Ingredients
​
1 Cup of asparagus
2 tablespoons of olive oil
A sprinkle of pepper
A sprinkle of salt
2 servings of your choice of pasta
1 jar of pasta sauce

Directions
Preheat oven to 375. Cut off the dry ends of the asparagus. Place asparagus on a
baking sheet, drizzle olive oil over them and sprinkle the salt and pepper to taste.
While waiting for the oven to preheat boil a pot of water. Wait for the oven to
preheat and then bake the asparagus for about 15 mins, if the asparagus is thin,
cook until slightly crispy, if it is thick, cook until it is soft. Once the water is at a
rolling boil, boil the pasta for the recommended time. Meanwhile in a medium
saucepan, heat up the jar of pasta sauce string occasionally. Combine the pasta,
sauce, and asparagus.
